What to do with Radish?

If like me you are suddenly pulling up radish quicker than you can eat it…I have a little recipe which may prove useful.

It is called Radish Tzatziki and has its origins in Greece. It is the simplest dish to prepare and makes a great accompaniment to salads.

Around 250g of radish will make a good serving for two people. These should be grated and mixed in a bowl with 4 cloves of garlic finely chopped. A teaspoon of paprika, a tablespoon of lemon juice and a sprinkling of salt and you have the basis of the dish.

Leave it in the fridge for 20 mins to marinade and then stir in 100 g of Greek yogurt.

I served mine on a bed of fresh lettuce from the garden and wasn’t disappointed. It had a great taste and meant that I wasn’t wasting all those little radishes!
